First, all the olives – seeds included – are crushed in a hammer mill. Next, the crushed fruits and seeds are subjected to a malaxer or kneader, which makes the oil droplets come together. Then a centrifuge separates the oil from water and wastes inside the olives. Finally, the olive oil is obtained with a vertical separator, and packaged for delivery!
